Tasting Tuesdays: Thai Massaman Curry

Husband and I both promised to spend more time in the kitchen after the chaos which equaled wedding season was over. So far, our new kitchen tools and compatible work schedules have made this a pretty easy feat, but I’m getting a little nervous about possible changes when we both go back to school in the fall.

If you’ve eaten my food before, you know I hate to use any sort of mix or kit, so I was a bit skeptical to try one yesterday. It was a gift, I rationalized, and we’ll need to find some cookings shortcuts come August, so I considered it field research.

I opened the box of Marion’s Kitchen Thai Massaman Curry (available at Fresh Market) and found simple directions along with individual packages of coconut milk, peanuts, sauce, and spices. I had already picked up a fresh pound of chicken breast and required vegetables (potatoes and onion) at the market. I organized everything on the counter and pulled out my best medium stove pan.

My favorite part of this kit was that it only required one pan. I did underestimate “medium” and needed to swap to a my large one after bubbling over, but that was my only difficulty. The rest of the dish followed along exactly as instructed with cooking the chicken in the sauce before adding coconut milk and simmering with vegetables. I steamed some rice on another burner which finished the same time as the dish.

Husband and I were both impressed with the flavor. Bold and distinct, without coming off too strong. The ingredients were all-natural and I could probably buy them all individually instead of purchasing the kit and make same recipe, but there is definitely a convenience factor. I consider my first meal kit a great success and may even purchase again in the future.
