Tasting Tuesday: Pumpkin Honey Vinaigrette Dressing

Yes, I am aware that it’s not really Tuesday, which is sad because I really enjoyed this Tuesday and would like to be experiencing it again. BUT! Be so proud of me because I made my own salad dressing! Well, I guess I always make my own salad dressing (so easy with all the fabulous flavored oils and vinegars you can find these days!), but this was a fancy salad dressing, so I get more points.

I was inspired by this delightful roasted peach and arugula salad that Husband and I enjoyed at a tapas restaurant in Napa. I wanted to transition the flavors to fall, so I kept the roasted peaches and arugula and updated to Toscano cheese with cinnamon (a Trader Joe’s find), candied pecans, and my new favorite pumpkin honey dressing!

Here’s what you do:

Stir together 4 Tablespoons olive oil, 2 Tablespoons rice vinegar, 2 Tablespoons pumpkin puree, and 2 Tablespoons honey. Add a touch of minced garlic and a dash of salt and pepper. Wisk together. Pour over salad. Enjoy the fruit of your homemade labors! I certainly did!

Sidenote: SO SAD! I adore my salad dressing mixer and get so many compliments on it, but IT BROKE today while making this dressing! I think the pumpkin was just a bit much for it to mix through, so be safe and stick with a boring fork or wisk. 🙂

  1. wow, I would have never thought of using pumpkin puree in a dressing. I have some left over from a baking project and so this recipe seems like a no brainer! Thanks.
