Ahhhh, homemade granola. Such a wonderful way to invite the smells and flavors of fall into your home. My mom used to make granola when I was little and my siblings and I would gather around the counter and try to sneak bites before it cooled. After making it myself this weekend, I was reminded how easy it is to prepare and now I am inspired to make seasonal granola for the rest of the year.
I borrowed this recipe, but for simplicity, I’ll share it again here:
Stir together 3 cups rolled oats, 1 cup chopped nuts, 1/2 cup coconut flakes, 1/2 teaspoon salt, 1 1/2 teaspoons cinnamon, and 1 teaspoon pumpkin pie spice in one bowl.
Stir together 1/2 cup honey, 1/4 cup brown sugar, 1/3 cup oil, 2 teaspoons vanilla extract, and 3 tablespoons pumpkin puree in another bowl.
Mix the two bowls together until everything is coated well. Spread on a greased baking sheet and bake in pre-heated oven of 325 degrees for 15 minute increments (stir well between each) until golden and crispy. Allow to cool.
Enjoy plain, with yogurt, on top of oatmeal or salads, or with whatever fall goodness floats your boat!

I’m not one of those “kill everyone in their path for pumpkin spice” kinda girls… but, this sounds really really good. I like that it’s not the typical pumpkin spice recipe, and I LOVE granola! I’ll be trying this out for sure!
