Holiday Bonus: Pumpkin Meringue Pie

Hello, blogging world! I am so proud of myself for actually “unplugging” this holiday and being able to be truly present with my friends and family for all of the festivities. With all the pre-finals school craziness, it’s been hard to spend five minutes without my laptop, let alone five hours! Being present meant celebrating so many wonderful things, like the engagement of two of our best friends (who met when serving as best man and bridesmaid at our wedding) and an expectant baby for my precious cousin (who was also in our wedding) and his adorable wife. So, basically, good things happen to people who were in our wedding. 🙂 AND I also participated in the First Ever Flegge Family Pumpkin Pie Bake-Off! (full disclosure: I did not win, but hey, competition was fierce).

So here, in all its glory, is my Pumpkin Meringue Pie.

I borrowed the recipe from my dear friend, Martha.

The pie base was pretty simple. I hadn’t made a pumpkin pie in a while, but it seemed like pretty standard stuff.

The baked pie had to refrigerate all night and then the meringue needed to be made right before serving, however, it seemed to stand up better as time went by, so maybe give it a few minutes before serving to avoid a sticky mess.

I got to use a cooking torch for the first time and plan to find many more excuses to use it again in the near future.

It wasn’t the best dessert I’ve ever made, but it was definitely festive and made a fabulous presentation piece.

  7. I would love to try that recipe and am particularly interested in getting a torch some day! I prepared and cooked a few side dishes and appetizers on Wed before Thanksgiving. I had the rare opportunity of having the house to myself, turned on Food Network and cooked till my hearts content!! That night my two sons made the desserts – Pecan Pie, Apple Pie and Pumpkin Roll. I always have my kids in the kitchen and have them make their favorite dish. My daughter made one of our favorites, corn casserole and shared it with her new friends in England where she is studying abroad. I love Thanksgiving and the whole weekend 😀

  8. Anyone who can do a meringue like that gets my vote. My favorite torch food: Crème Brule. I make the “crème” and my husband handles the blow torch topping. One day I’ll grow up (like you) and torch my own crème. Jo @ Let’s Face the Music
