In the midst of car repair appointments, chiropractor visits, cramming for finals, cleaning up a water explosion in our basement, and mourning the lack of Adele concert tickets, we’ve still had time for some festive creations at the Bungalow. My normal “go-to” when trying new recipes is making a fabulous dessert, but I leapt out of my safety zone this month to try savory Caramelized Onion and Bacon Gravy from one of my absolute favorite publications, Real Simple.
I was excited because I got to try out another new wedding gift: my immersion blender! The recipe called for taking everything out of the sauce pan, blending it in a food processing, and warming it back in the pan. Too much work! I just stuck my immersion blender right in the pan and ta da! Gravy was made!
The longest part of the recipe was caramelizing the onions, which can take about 30 minutes. The rest of the recipe was pretty simple and my favorite part was watching so much bacon become liquid.
You can make this gravy up to 3 days ahead as long as you cover and refrigerate it. Just simmer on the stove until ready to serve. My only complaint was that it was a tad too salty, so I would suggest a low-sodium bacon and only add salt if needed.
This recipe was a great way to spice up simple turkey and mashed potatoes and would be a great addition to your Christmas dinner. It also got rave reviews from Husband, who is a fan of just about anything bacon related.
