Tasting Tuesday: Crockpot Chicken Gnocchi Soup

Ahh! Warm winter soups! And even though we’ve had a surprisedly pleasant February in Indianapolis, I’ve still been in the mood for trying some tasty new recipes. Husband and I have been in a bit of a cooking rut with our busy school schedule, but this week, I realized I was tired of tacos and grilled chicken, so I called upon the all-knowing recipe database of Pinterest!

But sometimes, even amazing Pinterest can be a let-down, especially with so much product placement and ad space that seems to be recently cluttering up my home feed. I’ve noticed that some recipes are legit amazing while others seem like they skipped the test kitchen. (Anyone else have this experience?) I like sifting through, gradually trying some out, and creating a new board for recipes that have become my new “tried and true” favorites (hopefully you are following The Love Bungalow on Pinterest :).

This recipe is now one of them.

The title is a bit misleading, because even though the bulk of the recipe can be completed in the crockpot, there are still multiple steps that require many other pieces of kitchen equipment (I still have dirty dishes piled up on my counter from this endeavor).

I won’t recount all the steps, because they are outlined so beautifully here, but a quick recap includes simmering chicken with vegetables in a crockpot, browning bacon, sautĂ©ing spinach and garlic, and mixing it all together with some pre-made gnocchi (I used DeLallo brand). This smelled and tasted amazing. I was nice enough to share some with a friend, but now regret it because I want a whole new batch.
