Tasting Tuesday: Pecan Pie Baked Oatmeal

My fall tradition of hosting brunch for my house church ladies (flashback to 2016 and 2015) continued with YEAR FOUR a couple weeks ago. I’m finally starting to get into a routine with scheduling my house cleaning, recipe selecting, table setting, grocery shopping, and food creating (maybe it’s just me, but hosting is way more work than it seems!). Husband has also figured out the hospitality thing and quickly steps up to chop veggies, find matching bowls, and vacuum under the table. Basically, we are turning into a brunch machine.

Continuing with my tradition, I always try new recipes, even if the ones from last year were a huge success.

Pecan Pie Oatmeal

While the other recipes were pretty tasty, the oatmeal really stood out to me as a definite “do again.” I LOVE baked oatmeal, but usually don’t take the time to make it when it’s just me and Husband at home. I may need to make an exception, though, because this oatmeal was legit delish. I used the recipe from Lively Table and thought I would share it with you. I like that it uses ingredients I already have in my cabinets and only took about 5 minutes of actual hands-on time to prepare. Enjoy!

Pecan Pie Baked Oatmeal

Here’s what you need:

For Oatmeal:

  • 2 cups rolled oats
  • 1 tbsp ground flaxseed (optional)
  • 2 tbsp brown sugar
  • 1/4 tsp cinnamon
  • Pinch sea salt
  • 1 tbsp melted butter
  • 1 1/2 cups unsweetened almond milk or milk of choice
  • 2 large eggs
  • 1 tsp vanilla
For :
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 6 tbsp pure maple syrup
  • 1 cup pecan halves

And here’s what you do:

  1. Preheat oven to 375° F. Lightly grease a square 8″ x 8″ baking dish with cooking spray.
  2. In a large bowl, combine oats, flaxseed, brown sugar, cinnamon and salt.
  3. In a smaller bowl, whisk together butter, almond milk, eggs and vanilla. Pour into dry ingredients and stir to combine. Pour mixture into prepared baking dish.
  4. Bake oatmeal mixture 10 minutes.
  5. Meanwhile, prepare topping. Bring butter, brown sugar and maple syrup to a boil in a small saucepan. Stir in pecans.
  6. Once oatmeal has baked 10 minutes, remove from oven and top with pecans mixture. Return to the oven and make an additional 10-15 minutes.
  7. Remove from oven and serve warm or let cool to room temperature before covering and refrigerating.

  2. This sounds delcious. I also learned the key to hosting is a potluck and for those who don’t cook I direct them to the local wine shop or Costco 😂
