Right as this post goes live, Husband and I should be touching down in Toronto on our way to the (hopefully) beautiful Prince Edward Island. It’s the end of July and I have spent almost the entirety of summer sitting on my couch staring at a computer screen, but NO MORE! Summer finals are over and it’s time for museums and lighthouses and live music and whatever other wonderful things that happen on vacations.
I find vacations to be so powerful because they give a chance to reflect on our life from a different perspective and see if decisions, goals, and dreams makes sense in a different environment. I also believe in the power of play and adventure and try to be intentional about finding some place for it in my traditionally stable adult life. I am excited to connect with Husband, try some new food, and come back with all sorts of creative inspiration for the Bungalow!
But until then, I’m leaving you with my new “go-to” summer recipe. It’s the perfect addition to summer cook-outs, picnics, and those awkward times when you almost forgot that you promised to “take something” to your friend’s house. I got this recipe from my neighbor after enjoying a beautiful array of fresh salads at her most recent party. No, I don’t claim that it’s healthy, but it’s fun and flavorful and gives a perfect crunch.
So, here you go:
Frito Corn Salad (serves 8-10)
2 cups frozen corn, thawed
2 cups cheddar cheese, shredded
1 cup green pepper, chopped
1/2 cup red onion, diced
1 cup mayonnaise or good Greek yogurt
1 bag Chili Cheese Fritos Chips, crushed
Mix everything together, except for the Fritos. Chill. Right before serving, mix in Fritos. Top with cilantro, if desired. And then taste it and realize that even though it sounds weird, it is actually delicious and you now want more. Note: It does not keep well, so be sure to gobble it right down.
