Napa inspiration has been everywhere: I found Peppermint Lemonade at Fresh Market to remind me of our delicious, but expensive picnic at Oakville Grocery, I broke down and bought a pair of those printed shorts everyone’s been wearing all summer that I now plan to keep on forever, and I have been putting peaches in everything!
I’ve been seeing and sampling so many fun peach recipes this year, which makes me excited to recreate them all at home. My hardest struggle is picking the right peaches: they can be so sweet, irresistible, and juicy when perfect and so hard, bitter, and chewy, when not. Few cooking stressors rival starting your wonderful peach dessert only to find your fruit is tougher than your baking sheet. I haven’t perfected the art, but I have improved my skills of squeezing each one at the grocery, buying them several days in advance, and letting them rest at room temperate in a brown paper bag.
My plan was to grill these sweet treats, but I was grilling BBQ chicken right before and wasn’t sure if I wanted any leftover flavors on my impressionable fruit, so I went with roasting. OMG! So easy! Cut them in half and lay facing up on a baking sheet. Fill with flakes of butter and brown sugar, then dust with cinnamon and chopped walnuts.
Pour a cup of water on pan to keep skins tender. Bake at 375 for about 15 minutes, or until soft and warm. Top with Vanilla Bean ice-cream, Dulce De Leche Sauce, and a tiny sprinkle of sea salt.

Yum!! that looks so good! I will definitely have to try this soon. We do something similar with apples, but it’s like an apple pie inside the apple? Here’s the recipe we use!

Uh…. YUM! Nothing like peaches to epitomize summer in the U.S. of A! Wonder if it would work with Chinese peaches….
