I love being a part of my church’s mission team and I especially love when we try some fun new recipes together. Last week, we went with a Lebanese dinner to show some love to our dear friends who are considering a ministry move to Lebanon. I volunteered to bring the salad, but wasn’t quite sure what a Lebanese salad was, so I summoned the power of Google! And came up with this wonderful recipe! And I’m hoping it’s at least somewhat authentic… It made my whole house and car smell fresh and lemon-y and garlic-y. Nom, nom. I will definitely be making this again!

Here’s what you do:
Toss together…
2 cucumbers, diced
4 roma tomatoes, diced
1 red onion, minced
2 garlic cloves, minced
3 tablespoons mint, chopped
1/4 cup kalamata olives, pitted and sliced
1 cup feta cheese, crumbed or cubed
Drizzle with about 2 tablespoons olive oil and 1/4 cup lemon juice. Sprinkle with salt and pepper. Chill for 3 hours. Or not. It’s good either way. Easy, breezy!
